I experienced that kind of lag with some versions of minetest (around 0.4.4~0.4.6), only on a specific computer (not a low-end one) but even in singleplayer mode.
Since upgrading to 0.4.7, I didn't notify any more lag.

I think bronze tools are not the real problem here.
Like Calinou said, you don't have to use them.

What I see here is a problem of overcrowded creative inventory.
A redesign of the creative inventory (maybe with categories) would be the most elegant solution.
