It's always been available as an unstable build.
Stable release tomorrow? Not likely. There are still 7 items left on the roadmap, at least 2 of which are probably non-trivial.
Oh :-(

Lol, when will you core devs learn that you should never promise a fixed release date (not even vaguely)? xD

Just say “it's done when it's done” (or nothing at all), it's so much simpler! It also reduces whining! Win-win-situation! :P

We never promised a date, just said a rough target date. And almost all the blockers are cleared, just 2 more and some more testing

It's probably best to keep those dates "private" anyway

That's the problem. Nrz already said too much! XD
Saying too much about the release date, even if just rough, will be punished with heavy user whining not under 5 posts!

Anyway, I'm super-excited for Minetest 5.0.0. This will be a game-changer. Quite literally! :D

I also like to point all non-Linux users to this issue:
https://github.com/minetest/minetest/issues/8165

The dev team needs YOU to test Content DB. I am sure they will appreciate any help.

EDIT:
LOL, so it turns out rubenwardy actually released something on Feb 3. So technically, the dev team DID release something in time. Haha, nice!
We expect a Minetest release on the 2nd or 3rd Februrary if the Github milestone is cleared.
Nrz never specified it would be an RC. Well played, rubenwardy, well played! XD

A release candidate does not qualify as a release in my opinion. The date was actually changed at least two times.

How complete is the french translation. If it's incomplete I could maybe try to do some translating after school. French is my maternal language.

Keep up the good work, and don't give up.

French is at 81% complete right now, but keep in mind the current strings on Weblate are slightly outdated. You can still start translate right now, but expect to see an update in the near future.

erm, well if you could answer how many mods exist and give a lot of time to a dedicatet team of testers maybe there just might be a possible answer.

maybe simply list the mods important to you and ask for people to test and post results, might work best if you volanteer with a head start of some testing ...
Now that RC1 is out and a few servers are already running it (or even older dev versions), maybe it would be worth starting a status thread for mods? If you sit in the chair of a server owner, knowing which mod will break is not good enough ; you'd prefer to also have confirmation that some less popular mods you use are compatible as well.

This could actually be half-automated by (kind of) scrapping the server list page.

Fortunately the API is pretty stable. None of my public or (currently) private mods broke in 5.0.0 without changes. Mods should be adapted to 5.0.0 API for not using deprecated API calls though.

I guess that is valid for most mods up to a certain complexity.

Modders should use the feature freeze and RC phase for testing their mods with 5.0.0.

see my Example, could be taken for a list: Mods from my server running under 5.0.0 earlier - or just see what you also use.
