Yes, but I wouldn't touch it until 5.7.0 is out, as then I am sure there will not be a 5.6.2
But, as an idea, I just counted the first sorted 26 server I can see on one page of the server-list.
engine version - amount server using - time running
5.7.0-dev - 3 - 2.52 days
5.6.1 - 5 - 2.09
5.6.0 - 3 - 0.28
5.5.1 - 3 - 1.45
5.5.0 - 2 - 6.6
5.4.1 - 2 - 10.5
5.4.0 - 2 - 5.93

0.4.x - 4 - 1.66
So as of this result I might consider to use 5.4.1 as if not conflict by mods, this server run longest without restart,
after that I would use 5.5.0 with 6.6 days avg no restart as of update, crash
also 5.4.0 is stable with near 6 days
all other version servers are not even able to keep running for 2.5 days (5.7.0-dev better than 5.6.1) !
Outstanding stable is the Bildungsnetzwerk with 5.7.0-dev and 50 days.
Sure, the more a server is used, the more crash might happen,
and the newer the engine is, the more often an update of a mod might be needed or available.

even list show still "Players: 192/1291 " I found it ranges just between 170 lowest, most Tuesdays to around 500 max.
That max 1291 I even don't see in the monitoring stats, there the max is 1.050 gamer.
