The entire Minetest core repository license is LGPL 2.1+, so you can safely assume that it applies to the documentation as well. Granted, there are some exceptions for the textures, but those are listed here: https://github.com/minetest/minetest/bl ... ICENSE.txt

Edit: The examples in the docs are too trivial to care about their license anyway.
