Have you tried disabling shaders and any other option that could slow down performance?

mouse sensibility actually changes but it doesn't affect overall performance or fluidity.

If you really want to squeeze performance, you could try adding these lines to your minetest.conf file:

screenW = 300
screenH = 300

enable_clouds = false
enable_3d_clouds = false
new_style_leaves = false
opaque_water = false
new_style_water = false
smooth_lighting = false
enable_fog = false

wanted_fps = 50
fps_max = 60
viewing_range_nodes_min = 15
viewing_range_nodes_max = 20
view_bobbing = 0
desynchronize_mapblock_texture_animation = true
fsaa = false
enable_sound = 0

enable_particles = false
enable_shaders = false

enable_texture_atlas = false

disable_anticheat = false
enable_rollback_recording = false
This will disable shaders and rollback recording. This will leave your Minetest windows at a very small resolution (just resize it if you wish to do so, you can do that) and you'll have a small view range.
