Minetest will either use Lua 5.1 or LuaJIT installed on the system, everything else is irrelevant.
This matters because while LuaJIT is fully 5.1 compatible it also supports a few features from 5.2, such as the escape codes or goto.

If you develop with LuaJIT it's easy to accidentally use these features which won't work for people running 'normal' Lua.
